Glazed Peach Pancakes.

Pan Fried Peaches

Pancakes are usually the way I start my day.   I love them, but as you all know I hate the white flour garbage ones that everyone seems to adore.  Why,  I cannot understand,  they lack flavor and texture and nutrition.  I love whole grain pancakes that are filled with flavor and nutrition.  I have to say, that if a pancake taste to healthy it should not be eaten.  Pancakes don't have to taste healthy to be healthy.

My favorite are pancakes made with WonderFlour.  If you have not used WonderFlour in your pancakes, you have really missed out.

What is WonderFlour?  It is equal parts spelt, brown rice, and pearled barley.  I make it at least once a week.  I place the whole grains in a large bowl and mix them and then I grind them in my grain mill on the finest setting.  When I do that I have a large bucket with a lid on it for use all week long in my pantry.    It makes pancake making really easy in the early morning, or actually any time of the day or night.

I am always inventing new recipes and ways to make pancake eating a wonderful experience.  This time I had just bought a large box of peaches.  This breakfast was amazing.  My family loved it.  Actually they are spoiled a bit.   And this breakfast taste as good as it looks.

Glazed Peaches with WonderFlour Pancakes

To do the peaches,   I just slice them with the skin on and I remove the seed.   I dredge them in WonderFlour and pan fry them in coconut oil.

Turn them and cook them until they are golden brown. Remove and place them on top of fresh baked pancakes.

     Wonderflour Pancakes with Fried Peaches
4 eggs
1/4 cup oil
1/4 cup Xagave
2 teaspoons vanilla
1 teaspoon salt
3  cups milk, almond milk, or buttermilk.  Buttermilk is my personal favorite.
2 to 3 cups WonderFlour
1 teaspoon baking soda
1 tablespoon baking powder

Whisk eggs and add oil, Xagave, vanilla, salt, and milk.  Whisk well.  Add flour and whisk until desired consistency.  Add soda and baking powder, whisk well again and gently ladle unto a hot sprayed griddle.  Top with pan fried peaches and syrup.

Pancakes are a great way to start the day.  And pancakes can be a spiritual experience.  These are a spiritual experience.  Out of this world wonderful.  Enjoy  Chef Brad~America's Grain Guy

BYU Education Week, Amazing Experience.

I have my Saratoga Jack Thermal Cookers and I am ready to go.

Education Week was amazing.  I loved it.  It was a really great week of classes this year.  Each year it just gets better and better.  This year I taught 8 classes, 2 each night.  The first was a lecture on grains and health and nutrition.  The second was a cooking demonstration.

This year I cooked up all the grains I would be needing on Monday in the Saratoga Jack Thermal Cooker, (available at www.chefbrad.com).  Each cooker holds two different grains at a time.  There are two pans inside the  thermal cooker.  In the bottom pan I can cook five cups of grains, thats five cups of grains to ten cups of water.  In the top I can cook three cups of grains,  thats three cups of grains and six cups of water.  The way it works is that you place the two pans on the stove top and add the grains and water and bring them to a boil.  When they are at a boil place them in the thermal cooker with the pan lid on and close the lid of the thermal cooker.  I left the lid on for a few hours and then placed them in the refrigerator out of the thermal cooker in the pan they were cooked in.  When I was ready for Ed week  I pulled them out of the frig and placed them into the thermal cooker again.  They stayed chilled until needed.

For those of you who don't know BYU Education Week is one of the largest gatherings in the United States at any given time for Education.  There are hundreds of classes offered on the BYU Campus and over twenty thousand adults and youth attend classes for one week.   I have been teaching there for twelve years and each year I learn so much.   BYU Education Week is amazing and I highly recommend it to everyone.

My good Friend and assistant Kristina from "For Your Kitchen", in Clearfield.

In this class we did Grain Bowls with the cooked chilled grains.

After the Demonstration the crowd gathers around quickly for a taste.  I remember the first year I asked if they wanted a taste.  I nearly had a heart attack as the entire group jumped up and ran to the front of the room for a taste.

The BYU Ed Week staff is amazing.
They set up a camera  so the entire group can see what is going on.

The Second Class was all about Bread Making.    I love making Bread.

Making the Dough

The classroom is great.  I love the three screens.  It allows
everyone to see it all.

Samples  always go great.

Adoring Fans,  not for me, but for Marvin and Vanessa Joy.

These are my two new best Friends and Hero's   I adore them and I have to say
I have never taught a more enjoyable  class.
This year I had the most amazing experience ever.  Marvin Goldstien and Vanessa Joy were special guests for my last class.  Marvin played the piano and Vanessas Joy sang and I cooked.  Friday night class is Challenge the Chef Night, that is where someone shops for me and I have no idea what they are bringing.

This year Honeyville Grain employee Lisa Baker shopped for me and she really brought some fun stuff,  from freeze dried grapes, my personal favorite, to lots of wonderful Honeyville products.  It was great.  I provide the grains that are cooked and I create from all the ingredients two salads.  A savory and a sweet salad.  Every year it is a wonderful experience, but this year it was amazing.

Marvin is a whitty, sarcastic Jewish man,  Vanessa is a sweet adorable singer.  It was an hour duel of whits and charm, Vanessa was the charm.  I have to tell you that it was as if we had rehearsed for a year.  Truely an amazing experience.   I loved every minute of thier charm and whit.  Words cannot express how much I enjoyed thier pressence in my class.  I will hold forever in my heart the wonderful way they charmed the group and made cooking even a better experience.   If you have never  been to BYU Education Week, maybe you should plan on it next year. I am hoping to be able to do another class with Marvin and Vanessa Joy.  That would be fantastic.  Have a great day.

Annual Cousins Day with Chef Brad

Each summer I have the wonderful priveledge of having my great nieces and nephews over for a day long cooking adventure.  It is the delight of my summer.  I love them so much and have so much fun when they spend the day with me,  "Uncle Chef Brad".

This year was wonderful,  we started out going on a culinary tour.  I called ahead and was able to have a private tour for our group at Penzey's Spices and Outrageous Olive Oils.  It was amazing and these children were amazing.  They behaved perfectly and were attentive and so polite.  I loved showing them off.

In the middle of the tour we stopped off and I treated them to a bubble tea or boba drink.  If you don't know what that is it is time for you to get out more often and experience life.  It is a beverage with very large tapicoa pearls at the bottom.  I adore them and I love the texture.  So I wanted to share them with the children.  It was great fun.   I could tell that they were not to pleased.  It is a shock the first time.  They were trying to please me and like them, it was funny.  I finally told them I did not care if they did not like it,  I was only wanting them to experience it.  It was an instant change.  They informed me they did enjoy the experience, if not the beverage.  It was pretty funny.

After the culinary adventure we returned to my training center.  We spent the afternoon cooking.  We baked hamburger buns and brownies.  We also made a salad from the spices  and the oils and vinegar we purchased on our outing.  We cooked hamburgers and had a feast.  It was a memorable day to say the least.  I truely love each one of them and so enjoyed the day.

Enjoy the visual journey of the day.   Chef Brad~America's Grain Guy
